台灣目前淡菜的最大養殖區在馬祖南竿、北竿開放海域,在肉質上因馬祖海域鹹度適中、浮游生物相對豐富,讓身為濾食性生物的淡菜在肉質肥厚度、口感、風味上都較為優秀。
▲淡菜本身的鬚足是他的心臟,建議煮熟後再拔掉,保持淡菜新鮮。
▲淡菜外殼若有少許藤壺附著,可以使用菜刀刀背敲除。
▲新鮮淡菜只要放入滾水中,加入適量薑片及米酒,等待淡菜的貝殼打開,就可以食用囉。
▲收到淡菜如果開殼不代表死亡,因為是活體的,它們在呼吸,並非不新鮮喔!
▲收到淡菜時稍微些有水,為淡菜運送中自然吐水的現象,足重出貨,童叟無欺。
收到訂單後,會新鮮打撈祭出,因淡菜離岸後仍會進行呼吸作用,收到時仍可以活體保存3-5天喔!僅需冷藏!
